why do many want the crab?
Aside from the "key-ute" factor and that requests for crabs as an added mob predate the 1.13 addition of the turtle…
I suspect many are anticipating the 'greater reach' will apply to considerably more than block placing [which is the only use of which I can find official mention.]

Is there an official source for this? [I keep seeing this bandied about, but cannot find anything official tyhat supports the crab reachextension applying to anything other than block placement (which, admittedly, may well have a use in PvP).]

I can't decide but I think the penguin might be the best option overall

penguins make boats faster armadillos give your wolf armor and (rolls r's) crrrrrrabs let you place blocks at a (not rolling r's) farther distance
Its hard to choose... crabs would be kinda useless in Bedrock (considering they only add 1 block distance and that they dont have an equation) but would help with building, wolf armour is something people want but everyone just makes their dog sit down anyway to avoid danger, and penguins would make speed highways so much better but they are rare and slow on land making them harder to transport (except i guess they could speed up the boats but still, who builds their base on a tiny little stony beach)

You can't always just walk; ceilings and high walls would be much easier to build with a longer reach. Not everything can be reached from existing platforms, and scaffolding is a nightmare to use when it's very high.

If I really want to explore, I‘d choose elytra over the boat, so I don't think penguins are not necessary.

I like to enjoy the scenery along the way, so I don't care about the speed of the boat.
I'm personally voting for the penguin. I'd love crafting wolf armor (if I had hands or wolf partners) and placing blocks farther away (even though one can simply walk to said location), but faster boats sound PEAK.
